Turmeric powder 1 tsp
Coriander powder 1 1/2 tsp
Chilly powder 2 tsp
Grated coconut 2 tsp
Salt as per taste
Curry leaves a few
Fenugreek seeds 1/2 tsp
Garlic pods 2 tsp,chopped
Ginger 2 tsp,chopped
Pepper powder 1/2 tsp
Tamarind water 1 cup
Urad dal 1 tsp
Mustard seeds 1 tsp
Cumin seeds 1 tsp
Green chillies 3,chopped
Red dry chillies 3,cut into 3 pieces
-Cut brinjal into round pieces,each piece about 1cm thick.
-Mix together turmeric powder,chilly powder,salt & a little water to make a paste.Apply the paste on brinjal pieces & keep it for 10 minutes.
-Heat 2 tsp of oil in a pan.Fry the brinjal till it turns brown & keep it aside.
-Take a tawa,add cumin seeds,chana dal,urad dal & fenugreek seeds.Do a dry roast & powder them.
– Add curry leaves,green chillies,red chillies,ginger & garlic.
-Now add coconut,grinded powder,pepper,turmeric,chilly,coriander powders.Mix well.
-Add tamarind water & brinjal into it.
-Add salt,garam masala & mix well.
-Garnish it with chopped coriander leaves & have it with rice & ghee.
